Freeze Your Dinner Rolls and Cinnamon Rolls

Thanksgiving is right around the corner. Let’s be honest—there’s already enough going on. You don’t need to stress over baking fresh rolls or cinnamon rolls on the day. Here’s my go-to trick to make your holiday smoother: freeze them ahead of time!

How to Freeze Rolls and Cinnamon Rolls

The key is to freeze them after the first rise and shaping. Here’s what I do:

  1. Once the dough is shaped, I place the rolls on a parchment-lined baking sheet. I also place the cinnamon rolls in their baking dish.
  2. For rolls, I flash-freeze them for about an hour, then transfer them to a freezer bag. For cinnamon rolls, I just wrap the baking dish tightly with plastic wrap and foil.
  3. When I’m ready to bake, I take them out the night before. I let them thaw in the fridge. The next morning, I let them proof at room temperature until they puff up.

🧡 This method keeps the rolls soft and fluffy, and no one will even guess they were prepped ahead!

  1. Don’t Bake the Glaze: For cinnamon rolls, always wait to add the glaze after they’re baked. It’s fresher and looks more appetizing dripping down warm rolls.
  2. Keep it Simple: Don’t overthink the process. Baking ahead and freezing gives you more time to focus on the meal (or just enjoy the day).
