The magic of quick breads lies in their leavening agents. Instead of yeast, quick breads rely on chemical leaveners like baking powder or baking soda (or often a combination of both) to create lift and texture. Here’s how it works:

  1. Baking Soda: This reacts with acidic ingredients in the batter (like buttermilk, yogurt, or fruit) to produce carbon dioxide gas. These bubbles get trapped in the batter, causing it to rise as it bakes.
  2. Baking Powder: This is a combination of baking soda, cream of tartar (an acid), and sometimes cornstarch. It starts producing bubbles as soon as it gets wet (double-acting baking powder also produces more bubbles when heated).

1. No Buttermilk? No Problem!

Mix 1/2 cup milk with 1 1/2 teaspoons of lemon juice or vinegar. Let it sit for 5 minutes, and voila – homemade buttermilk substitute!
