Equipment

  • Mixing bowls You'll need various sizes for different components of the recipe, such as mixing the dough, the cream cheese filling, and the walnut streusel.
  • Measuring cups and spoons Accurate measurements are crucial for the success of baking recipes. Ensure you have a full set for measuring both wet and dry ingredients.
  • Whisk Useful for thoroughly combining the yeast with the warm milk and for mixing the egg into the dough.
  • Electric Mixer: While not strictly necessary, an electric mixer with a dough hook attachment can significantly ease the process of kneading the Danish dough.
  • Rolling Pin Essential for rolling out the Danish dough to the desired thickness before filling and shaping.
  • Baking Sheets or Muffin Tin: Depending on your preferred shape for the Danish, you may need a flat baking sheet or a 12-cup muffin tin to bake individual portions.
  • Parchment Paper or Silicone Baking Mat: To prevent sticking and ensure easy removal of the pastries from the baking sheets.
  • Pastry brush For applying the egg wash to the Danish before baking, giving them a beautiful golden finish.
  • Wire cooling rack Allows the Danish pastries to cool properly without becoming soggy.
  • Sharp Knife or Dough Scraper: Useful for cutting the dough and also for chopping ingredients such as the walnuts.
  • Oven Thermometer: Ensures your oven is at the correct temperature, which is crucial for baking.
  • Fine Mesh Sieve: For dusting powdered sugar on the finished Danishes, if you're opting for the glaze.

Ingredients

For the Danish Dough:

  • 500 g all-purpose flour
  • 250 ml warm milk around 45°C
  • 10 g instant yeast
  • 50 g sugar
  • 5 g salt
  • 1 large egg room temperature
  • 60 g unsalted butter softened

For the Filling:

  • 200 g cream cheese softened
  • 50 g sugar
  • 1 tsp vanilla extract
  • 150 g fresh blueberries
  • For the Walnut Streusel:
  • 100 g all-purpose flour
  • 50 g cold unsalted butter cubed
  • 50 g brown sugar
  • 1 tsp ground cinnamon
  • 100 g chopped walnuts

For the Glaze

  • 100 g powdered sugar
  • 1-2 tbsp milk

Instructions

Prepare the Danish Dough:

  • In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  • Add the flour, egg, and salt to the yeast mixture. Mix until a dough starts to form.
  • Incorporate the softened butter and knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.

Make the Filling:

  • In a medium bowl, mix the softened cream cheese, sugar, and vanilla extract until smooth. Set aside.

Prepare the Walnut Streusel:

  • In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cubed butter and rub into the dry ingredients with your fingertips until the mixture resembles coarse crumbs. Stir in the chopped walnuts.

Assemble the Danishes:

  • Preheat your oven to 180°C (adjust for altitude if necessary*). Grease a 12-cup muffin tin.
  • Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball and then flatten into a disc. Place each disc into a muffin cup, gently pressing to form a cup shape.
  • Spoon a generous amount of the cream cheese mixture into each dough cup, followed by a few blueberries.
  • Sprinkle the walnut streusel over the top of each filled Danish.

Bake:

  • Bake in the preheated oven for 15-20 minutes, or until the Danishes are golden brown and the streusel is crispy.
  • Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Glaze (optional):

  • Mix the powdered sugar and milk to create a thick but pourable glaze. Drizzle over the cooled Danishes.

Notes

Enjoy your homemade Cream Cheese, Blueberry Danish with Walnut Streusel, perfect for a delicious breakfast or a sweet treat any time of the day.
*Altitude Adjustment: Baking at high altitudes (above 3,000 feet) can affect recipes. You may need to increase oven temperature by 10-15°C and decrease baking time slightly. Keep an eye on your Danishes to ensure they don’t overbake.
