Ingredients
  

  • 240 mL 1 cup whole milk
  • 120 mL ½ cup warm water
  • 60 mL ÂĽ cup; 57g unsalted butter, melted.
  • 50 g ÂĽ cup sugar
  • 7 g 2 ÂĽ teaspoons; 1 packet active dry yeast
  • 500 g 4 cups all-purpose flour, plus more for dusting (up to an additional 50g if using a stand mixer)
  • 9 g 1 ½ teaspoons kosher salt
  • 2 large eggs room temperature (One is for the egg wash.)
  • Neutral oil for greasing
  • Fresh rosemary sprigs
  • Maldon salt for finishing

Instructions
 

  • Combine milk, water, melted butter, and sugar in a bowl.
  • Sprinkle yeast over the mixture, stir, and let stand for 5 minutes until foamy.
  • In a stand mixer or large bowl, mix flour and salt. Add beaten eggs to the yeast mixture, then combine with the dry ingredients. Mix for 10-15 minutes until roughly combined.
  • Turn the dough onto a floured surface and knead by hand, adding flour as needed, until a smooth ball forms and it’s less sticky.
  • Place dough in an oiled bowl, cover, and let rise until doubled in size, about 1 hour.
  • Punch down dough, divide into rolls, and place on a baking sheet. Let rise for 30 minutes.
  • Preheat oven to 190ËšC (375ËšF).
  • Brush rolls with beaten egg. Decorate each with a rosemary sprig and sprinkle with Maldon salt.
  • Bake for 25-30 minutes until golden.
