  • Dough Preparation: Mix flour, yeast, sugar, and salt in a large bowl. Gradually add warm water, mixing to form a dough. Knead for 10 minutes on a floured surface until smooth. Place in an oiled bowl, cover, and let rise for 1 hour, or until doubled.
  • Shaping the Bread: Divide the risen dough into two parts, one slightly larger. Form the larger piece into a round ball and roll in mixed seeds to coat. Flatten the smaller dough piece into a circle large enough to cover the seeded ball. Brush one side lightly with olive oil.
  • Assembling: Place the oiled side of the flattened dough onto the seeded ball, gently sealing the edges underneath. Let the assembled dough rise on a parchment-lined baking tray for 30 minutes.
  • Scoring and Baking: Preheat the oven to 200°C (390°F). Score the bread lengthwise deeply, ensuring to cut through the outer dough layer. Bake for 30 minutes or until golden and hollow-sounding when tapped.
