Ingredients
- 500 g 4 cups bread flour
- 150 g sourdough starter pasta madre
- 75 g 1/3 cup granulated sugar
- 5 g 1 tsp salt
- 250 ml 1 cup warm milk
- 60 g 1/4 cup unsalted butter, softened
- 1 large egg
- For the Filling:
- 100 g 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 60 g 1/4 cup unsalted butter, softened
- For the Glaze:
- Hazel nut syrup
- Honey
Instructions
- Prepare the Dough:
- In a mixing bowl, combine the bread flour, sourdough starter, granulated sugar, and salt.
- Make a well in the center and add warm milk, softened butter, and the egg.
- Mix until a dough forms, then knead it on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it, and let it rise for 1-2 hours until doubled in size.
- Make the Filling:
- In another bowl, mix brown sugar and ground cinnamon.
- Roll out the dough into a 12×16-inch rectangle.
- Spread the softened butter evenly over the dough, followed by the cinnamon mix.
- Roll and Slice:
- Starting from the long edge, tightly roll up the dough into a log.
- Slice the log into 12 even pieces using a sharp knife or dental floss.
- Bake:
- Place the scrolls in a greased baking dish, leaving space for rising.
- Cover and let them rise for another 3 hours.
- Preheat your oven to 180°C (350°F).
- Bake the coffee scrolls for 20-25 minutes, or until they are golden brown.
- Prepare the Glaze:
- While the scrolls are baking, make the glaze by mixing 1 part hazelnut syrup, 1 part honey, and a touch of vanilla.
- Glaze and Serve:
- Once the scrolls are out of the oven, let them cool for a few minutes.
- Drizzle the hazelnut glaze over the warm Coffee Scrolls.
