These wonderful Coffee Scrolls are a treat for any time of the day. Soft, sweet, and swirled with cinnamon, they're perfect with your morning coffee or as a satisfying snack. Follow this simple recipe to bring the warm aroma of freshly baked scrolls into your home.

Equipment

Ingredients
  

  • 500 g 4 cups bread flour
  • 150 g sourdough starter pasta madre
  • 75 g 1/3 cup granulated sugar
  • 5 g 1 tsp salt
  • 250 ml 1 cup warm milk
  • 60 g 1/4 cup unsalted butter, softened
  • 1 large egg
  • For the Filling:
  • 100 g 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 60 g 1/4 cup unsalted butter, softened
  • For the Glaze:
  • Hazel nut syrup
  • Honey

Instructions
 

  • Prepare the Dough:
  • In a mixing bowl, combine the bread flour, sourdough starter, granulated sugar, and salt.
  • Make a well in the center and add warm milk, softened butter, and the egg.
  • Mix until a dough forms, then knead it on a floured surface for about 10 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover it, and let it rise for 1-2 hours until doubled in size.
  • Make the Filling:
  • In another bowl, mix brown sugar and ground cinnamon.
  • Roll out the dough into a 12×16-inch rectangle.
  • Spread the softened butter evenly over the dough, followed by the cinnamon mix.
  • Roll and Slice:
  • Starting from the long edge, tightly roll up the dough into a log.
  • Slice the log into 12 even pieces using a sharp knife or dental floss.
  • Bake:
  • Place the scrolls in a greased baking dish, leaving space for rising.
  • Cover and let them rise for another 3 hours.
  • Preheat your oven to 180°C (350°F).
  • Bake the coffee scrolls for 20-25 minutes, or until they are golden brown.
  • Prepare the Glaze:
  • While the scrolls are baking, make the glaze by mixing 1 part hazelnut syrup, 1 part honey, and a touch of vanilla.
  • Glaze and Serve:
  • Once the scrolls are out of the oven, let them cool for a few minutes.
  • Drizzle the hazelnut glaze over the warm Coffee Scrolls.
