  • Mixing bowl
  • Baking sheet
  • Parchment paper
  • Pastry brush
  • – Oven

  • 240 g 1 cup active sourdough starter (100% hydration)
  • 400 g 3 1/3 cups bread flour
  • 10 g 2 tsp salt
  • 40 g 2 tbsp sugar
  • 2 large eggs
  • 80 ml 1/3 cup milk
  • 40 g 3 tbsp unsalted butter, softened
  • Extra melted butter for brushing

  • In a mixing bowl, combine the active sourdough starter, bread flour, salt, sugar, eggs, milk, and softened butter.
  • Knead the dough until it’s smooth and elastic, which may take about 10-15 minutes.
  • Place the dough in a greased bowl, cover it, and let it rise at room temperature until it’s doubled in size, which may take 4-6 hours.
  • After the dough has risen, gently punch it down and divide it into equal portions to shape into rolls.
  • Place the rolls on a baking sheet lined with parchment paper, cover them, and let them rise for another 1-2 hours.
  • Preheat your oven to 375°F (190°C).
  • Brush the risen rolls with melted butter.
  • Bake in the preheated oven for 20-25 minutes or until they’re golden brown and sound hollow when tapped on the bottom.
  • Remove from the oven, let them cool slightly, and serve.
  • Total Time: About 7-9 hours (including rising time)

You can adjust the tanginess of the rolls by increasing or decreasing the amount of active sourdough starter used.
These rolls freeze well. Once cooled, you can freeze them in an airtight container. To reheat, simply thaw and warm in the oven for a few minutes.
Experiment with different shapes for your rolls, such as knots, twists, or traditional round rolls.
