  • 2 1/4 teaspoons 7 grams active dry yeast
  • 1/2 cup 100 grams granulated sugar
  • 4 cups 480 grams all-purpose flour, plus extra for dusting
  • 2 large eggs
  • 1/2 cup 113 grams unsalted butter, melted
  • 1 teaspoon 5 grams salt
  • Chocolate Filling:
  • 1/2 cup 100 grams granulated sugar
  • 1/4 cup 25 grams unsweetened cocoa powder
  • 4 ounces 113 grams bittersweet chocolate, finely chopped
  • 1/4 cup 57 grams unsalted butter, softened
  • 1 teaspoon 5 grams ground cinnamon
  • Streusel Topping:
  • 1/2 cup 60 grams all-purpose flour
  • 1/2 cup 100 grams granulated sugar
  • 4 tablespoons 57 grams unsalted butter, cold and cut into small pieces
  • Syrup:
  • 1/3 cup 80 ml water
  • 1/3 cup 100 grams granulated sugar

Instructions

  • Prepare the Dough:**
  • In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
  • In a separate bowl, combine sugar, eggs, melted butter, and vanilla extract. Mix well.
  • Warm the milk slightly and add it to the egg mixture. Stir until combined.
  • In a large mixing bowl, combine the flour and salt. Gradually add the wet mixture to the dry ingredients, mixing until a soft dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
  • Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1-2 hours or until doubled in size.
  • **Prepare the Chocolate Filling:**
  • In a microwave-safe bowl, melt the butter and chocolate chips together in 30-second intervals, stirring until smooth.
  • Stir in the powdered sugar, cocoa powder, and ground cinnamon until the mixture resembles a thick chocolate paste. Set aside.
  • **Assemble the Babka:**
  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  • Punch down the risen dough and roll it out on a floured surface into a 12×18-inch rectangle.
  • Spread the chocolate filling evenly over the dough, leaving a small border around the edges.
  • Starting from the long side, tightly roll the dough into a log.
  • Using a sharp knife, slice the log in half lengthwise, exposing the layers of chocolate filling.
  • Twist the two halves together, forming a braided log.
  • Carefully place the braided dough into the prepared loaf pan.
  • **Bake the Babka:**
  • Bake in the preheated oven for 30-35 minutes or until the Babka is golden brown and a toothpick inserted comes out clean.
  • While the Babka is baking, prepare the sugar syrup. In a small saucepan, combine water and sugar. Heat over medium heat until the sugar dissolves. Remove from heat and set aside.
  • When the Babka is done, remove it from the oven and immediately brush the sugar syrup over the top while it’s still warm.
  • Allow the Babka to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • **Conclusion:**
  • Enjoy your homemade Chocolate Babka! Slicing into this decadent bread and revealing the swirls of chocolate inside is a delight. Whether you serve it for breakfast, brunch, or as a sweet treat, it’s sure to impress your family and friends.

Notes

For best results, make sure your yeast is fresh and the water for proofing is at the correct temperature.
– You can customize your Babka by adding chopped nuts or raisins to the chocolate filling before rolling.
