Ingredients:

For the Enriched Dough:

– 250 ml (1 cup) whole milk

– 21 g fresh yeast or 7g active dry yeast / instant yeast

– 500 g (1 lb.) plain or all-purpose flour, separated 300g / 200g (3/5 & 2/5)

– 50 g (4 Tbsp) white sugar

– ½ tsp salt

– 50 g (½ stick) unsalted butter, very soft

– 1 large egg, beaten

For the Filling:

– 50 g (½ stick) unsalted butter, melted

– 100 g (8 Tbsp) white sugar

– 3 tsp ground cinnamon

For the Egg Wash:

– 1 egg, beaten

– 2 Tbsp whole milk

To Serve:

– Powdered / icing sugar, for dusting

Instructions:

For the Enriched Dough:

1. Warm the whole milk until it’s just slightly warm to the touch. Dissolve the yeast in the milk and let it sit for about 5-10 minutes until frothy.

2. In a large bowl, mix 300g of flour, sugar, and salt. Add the yeast mixture, softened butter, and beaten egg. Stir until a dough forms.

3. Gradually add the remaining 200g of flour while kneading the dough. Knead for about 5-7 minutes until it’s smooth and elastic. The dough should be slightly sticky but manageable.

4. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour until it has doubled in size.

For the Filling:

1. Mix melted butter, sugar, and ground cinnamon in a small bowl.

Assembly:

1. Divide the dough into four equal portions. Roll each portion into a 10-inch circle.

2. Place one dough circle on a parchment-lined baking sheet.

3. Spread a third of the filling mixture over the dough.

4. Repeat the process with the remaining dough and filling, stacking them on top of each other.

5. Place the final dough circle on top.

6. Use a glass or a round cutter to make a small indentation in the center.

7. Cut the dough into 16 equal parts, leaving the center intact.

8. Take two adjacent sections and twist them away from each other twice. Repeat for all pairs.

9. Cover the bread and let it rise for 15-20 minutes while preheating your oven to 350°F (180°C).

10. Brush the bread with the egg wash.

11. Bake for 25-30 minutes or until it’s golden brown and sounds hollow when tapped on the bottom.

12. Dust with powdered sugar before serving.

Notes:
