  3. Shape: Lightly flour your work surface. Turn out the dough, gently shape it into a round, and place it seam-side up into a floured banneton or a cloth-lined bowl.

  4. Final Rise: Cover and proof for 1.5 to 2.5 hours, depending on room temperature. The dough should feel airy and slightly domed but not collapsed.

  5. Preheat: Place a lidded Dutch oven in your oven and preheat to 450°F (230°C) at least 30 minutes before baking.

  6. Bake: Turn the dough out onto parchment. Score it, then lower it into the hot pot. Cover and bake for 30 minutes.

  7. Uncover & Finish: Remove the lid and bake another 15–20 minutes until the crust is deep golden and crisp.

  8. Cool: Let the loaf rest on a wire rack for at least 1 hour before slicing. The crumb will finish setting as it cools.


Hot Weather Tip:

If your kitchen is over 85°F, reduce the bulk fermentation window or do the final proof in the fridge to prevent overproofing. A cold second rise also improves crust and flavor.
