🍑🍎 Blueberry Peach Apple Bread 🍞

I made this moist and fruity loaf without any water or milk! It’s packed with juicy peaches, fresh blueberries, applesauce, and diced apples. If you’re ready to bake something comforting and delicious, let’s get started! 🥄

Quick Tip: With all the liquid from the applesauce, peaches, blueberries, and apples, your loaf may take longer to bake. Don’t worry—I’ll show you how to ensure your bread comes out perfectly baked every time!


Ingredients

  • 2 cups all-purpose flour (240 g)
  • 1 tsp baking powder (4 g)
  • 1/2 tsp baking soda (2 g)
  • 1/2 tsp salt (3 g)
  • 1/2 tsp cinnamon (optional, 1 g)
  • 1/4 tsp nutmeg (optional, 0.5 g)
  • 1/2 cup sugar (100 g)
  • 1/4 cup oil (60 ml)
  • 1 cup applesauce (240 ml)
  • 1 egg
  • 1 apple, peeled and diced (150 g)
  • 1 peach, peeled and diced (150 g)
  • 1/2 cup blueberries (75 g)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the wet ingredients: sugar, oil, applesauce, and egg.
  4. Combine the mixtures: Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Add the diced apple, peach, and blueberries, folding them in gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.

📝 Notes on Baking Time:

  • Adjust baking time if needed! All the moisture from the fruit and applesauce means this loaf may take longer to cook.
  • After an hour of baking, use a digital thermometer to check the internal temperature. The bread is fully baked when it reaches 200°F (93°C).

💡 Why use a thermometer?
My loaf looked ready after an hour, but when I checked, it was only at 185°F. I gave it another 10 minutes, and it came out perfect! If you don’t already own one, I highly recommend this digital thermometer for accurate results: Digital Thermometer on Amazon.

Bake It!

  • Bake the bread at 350°F (175°C) for 60-70 minutes, or until the internal temperature is 200°F (93°C).
  • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Optional Peach Glaze 🍑

Mix 1/2 cup powdered sugar (60 g) with 1-2 tbsp peach juice (30 ml). Drizzle over the cooled loaf for an extra fruity finish.
